Mushroom Burger

Fortunately for me, my other half is a devoted vegetarian. All the meals I make are for the both of us, but with some families and couples it could be different. One of you is a meat eater while the other one is a vegetarian. That is why I think that if done right, a vegetarian burger would be a great dish to serve for different eating preferences.

My other half does a little dance when I prepare my Mushroom Burgers, he can eat 1 1/2. When he invited his South American Meat eating friend over for lunch I just pulled my Mushroom Burgers out of the freezer, grilled, dressed, and served with a side of celery sticks.

A big hit! His friend was surprised that is was completely healthy and on top of that vegetarian.

One batch can make about 8-10 normal size patties, it freezes easily, and tastes just as delicious as the first time you made it.

What you’ll need:

12 oz. mushrooms, coarsely chopped (any dark mushroom)

1 c of whole-wheat flour

3 1/2 c of old-fashioned oatmeal (don’t use instant)

2 c cubed celery

1 c shredded carrot

1 c chopped walnuts

1 medium diced red onion

2 t garlic powder

2 T dried oregano

1 t cumin powder

1 t dried chili flakes

1/2 c soy sauce

How to prepare:

  1. Preheat oven to 200 Celsius prep two baking sheets with cooking spray.
  2. Bring 4 1/2 cups of water to a boil.
  3. And all herbs, vegetables, and soy sauce, let sit on medium heat for about 10 minutes. Making sure you mix well so it does not burn at the bottom of the pot. Don’t over cook because you will have to bake it in the oven.
  4. Let cool before start forming into round patties, about 20 minutes.
  5. I like to use plastic gloves when I am forming the mixture, for it can get rather messy. Form the mixture into round patties. If you find that your mixture is soft dust a little whole-wheat flour to pull it together.
  6. Place the round patties on the baking dish about an inch apart.
  7. Bake for10 minutes on each side.
  8. Cool Completely before storing in the freezer or for eating that day.
  9. If you are planning on serving the patties the day you make them, once cooled completely heat a stove top grill or prepare your BBQ grill. If using a stove top grill heat the grill on medium high heat. Spray with olive oil or cooking spray. The grill will start to smoke, that is okay, you want that smokey flavor. Place the designated amount of patties on the grill. You can use BBQ sauce, ketchup, or Beef Steak Sauce for flavor. I use BBQ and I coated the top of the patties while on the stove top.
  10. Then cover with a foil wrap tent for less then 5 minutes.
  11. Serve with your choice of bun or bread, garnishes, and or cheese if you opt. for non-vegan burgers.

If you are planning on storing the patties, make sure it is cooled completely and use zip lock bags. Be sure to have some sort of wax paper or paper to separate the layers.
