Homemade Apple Sauce
Mahalo Chico,
When baking, I like to substitute apple sauce for items such as cream, butter, oil, and even milk.
Its a bit healthier than using all fats and tastes just as good if you were to use fats. Of course my homemade apple sauce can also be eaten alone or with vanilla ice cream. Get creative, try it out.
Serves: Up to 4 cups
Prep Time: About five minutes
Cook Time: About ten minutes
Materials:
1. 4 Granny Smith apples, peeled, cored and roughly chopped
2. Medium sized pot
3. Potato masher or food processor
4. 2/3 c water
5. 2 T dark brown sugar
How to:
1. Put the water in the pot and bring to a boil add the sugar and apples allow to cook enough so the apples get mushy. Add a bit more water if necessary.
2. Turn off heat, remove and mush or process.

Hazelnut Chocolate Squares
Mahalo Chico,
This morning I was craving chocolate and hazelnuts, so I decided to put the two together and make a brownie-cake mix.
Serves: At least 6 pieces
Prep Time: Less than five minutes
Cook Time: 35 Minutes
What you’ll need and do:
1. 8-inch baking dish
2. 1 can condensed milk
3. 1 c crushed hazelnuts
4. 1/2 c white flour
5. 1 egg
6. 1 t vanilla extract
7. 1/2 t baking powder
What to do:
1. Preheat oven to 195 degrees celsius
2. Grease pan with a bit of butter
3. In a large bowl, mix the dry ingredients minus the hazelnuts
4. Mix in the wet ingredients
5. Fold the hazelnuts in
6. Tip onto the pan and place in the oven for about 35 minutes. Stick a tooth pick in the middle and if it comes out dry than you are done, if not cook for a tad longer, but watch carefully.

Scalloped Potatoes-A wonderful Vegetarian Side-

Scalloped potatoes are a wonderful side dish for any vegetarian meal. I like to pair it with my veg. loaf and mushroom sauce. It’s a great holiday dish as well.
Serves: Up to 4 to 6 people
Prep Time: Up to five minutes
Cook Time: Up to forty minutes
What you’ll need and do:
1. Baking dish greased with oil or butter
2. 6 small to medium size white potato already peeled, rinsed, and thinly sliced in circular shapes.
3. 1 c white flour
4. 1/2 c dried oregono
5. 1 c butter
6. Freshly ground sea salt and black pepper
7. 1 1/2 c scalled whole milk
8. Pre heat oven to 175 degrees celsious. In a layering technique, place sliced potato to cover size of baking dish, sprinkle oregono, add butter, sprinkle flour, and repeat until you have covered the dish. Heat small pot, place milk. As soon as you hear the milk scallding, turn off heat and tip into the already prepared dish.
9. Cover the top with foil the most shiny side facing the dish and place in the oven for about 50 minutes. Uncover in the last ten minutes to bake the top. Allow ten minutes to cool before serving add freshly ground sea salt black pepper. Goes great with Mushroom Graving or simply by its self. Enjoy.

Home Made Chewy Chocolate and Walnut Cookies

I made these the other day and they were a hit with my family. I still can’t believe there are a few left.
Serves: Up to 16 small sizes
Prep Time: Less than fifteen minutes
Cook time: About eight to ten minutes
What you’ll need and do:
1. Mixing bowl with blender and two baking pans
2. 1/2 c butter
3. 1 c packed brown sugar
4. 3 T powdered sugar
5. 1 egg
6. T vanilla extract
7. 1 3/4 c flour
8. 1/2 t baking soda
9. A pinch of salt and 1/2 T baking soda
10. 1 1/2 t ready made coffee
11. 1 1/2 chocolate chips
12. 2 c walnuts
13. Cream, butter, sugar, and eggs in the bowl with blender.
14. Add the vanilla and coffee.
15. Add the flour, salt, and baking soda. Make sure that it is creamy.
16. Fold in the chocolate chips and walnuts.
17. Set your oven to 190 degrees C.
18. Spoon the mixture onto the baking pan ensuring you give a space in-between.
19. Bake for about eight to ten minutes, remove from baking pan and place on drying wrack. Serve.

Home Made Lemon Bars in Uruguay

My other half loves tart flavors, so I came up with this lemon bar recipe to please his tastes buds.
Serves: Up to Four People
Prep time: Less that fifteen minutes
Cook Time: About thirty minutes
What you’ll need and do:
For the crust:
1. 2 c all purpose flour
2. 1/2 c powdered sugar
3. 2 sticks melted butter
For the Filling:
1. 4 eggs
2. 2 c sugar
3. Juice and rind of 6 large lemons
4. 1/4 c all purpose flour
5. 1/2 teaspoon baking powder
6. Powdered sugar for dusting
What do do:
1. Preheat oven to 350 degrees F or 220 degrees C
2. mix the ingredients for the crust
3. Use a shallow square baking pan and pat spread the already mixed crust and cook until golden brown about ten minutes or so.
4. Mix all the ingredients for the filling in another bowl thoroughly, cover with flim and put in the fridge until ready to bake.
5. Take out the already golden baked crust and let sit until completely cool, about ten minutes or so.
6. Take the already mixed filling and gently pour the filling mixture onto the cooled crust. Turn down the heat a bit-at-least to 180 degrees F or 100 degrees C-. Place in the oven and back for twenty minutes or so until baked completely.

Home Made German Pancakes in Uruguay

My mother is half German and when we were kids she’d make Sunday a special brunch day where she’d make home made German Pancakes. Now that I am older and have a family of my own I have my own special Sunday brunch every Sunday of the week. And sometimes I mix it up from french toast to German Pancakes.
Serves: Up to 4 people
Prep time: Less than five minutes
Cook time: Less than one minute per pancake
What you’ll need and do:
For the ingredients:
1. 2 eggs
2. 2 T refined sugar
3. 3 T all purpose white flour
4. 3/4 c sparkling water
5. Blender or electric mixer and bowl, and non-stick skillet
6. Take all the ingredients and mix together in the blender or electric mixer and bowl
7. Heat your non-stick skillet and add a tablespoon of the mixture, ensure that the surface area is coated or enough of the pancake mixture creates a thin circle or thin square. Flip when lightly golden brown.
8. Repeat until all the pancake mixture is done. Serve warm with some fresh berries and honey as syrup.

Deep Fried Sweet Banana with Coconut Ice Cream

A Pacific Islander favorite, Deep Fried Sweet Banana with Coconut Ice Cream. Totally bad for you in so many ways, but really ummy. I’d recommend to serve this dish after a really spice, salty, savory dish, like some curry.
Prep time: about 10 minutes or less
Cook time: about 20 t0 30 minutes or less
Serves: up to 4 people
What you’ll need:
- a shallow frying pan
- a spatula
- a plate to hold the already battered bananas
- a plate with a few paper towels placed on top
- two bowls for dipping the flour and beaten egg
- individual serving bowls
- 4 c vanilla ice cream (1 c per person)
- 1 c sweetened powdered coconuts
- 1 c toasted slivered almonds
- 4 hard bananas (1 banana per person)
- 2 c white flour
- 1 egg beaten
- 1 t dark brown sugar
- 1 t powdered cinnamon
- vegetable oil or grape seed oil (enough for deep frying)
What to do:
- Cut the unripened bananas each in half
- Mix the dark brown sugar and powdered cinnamon with the white flour in one dipping bowl. Then place the egg in a separate dipping bowl ensure its beaten. Set aside on reserved plate.
- Heat the frying pan with enough oil to cover the bananas. Ensure that the oil is very hot.
- One at a time, dip the already cut banana in the flour mixture, lightly on the egg and finally back to the flour mixture and set aside. Repeat this systems until you’ve finished all the bananas.
- Now one at a time, using your spatula place each battered banana in the very hot frying pan. Turn the heat a bit lower and frying the battered bananas a few at a time flip once on each side. Take your spatula and remove the bananas that already cooked and place on the plate with paper towels. Continue this systems until all your bananas are done.
- Once your guest or your special someone is ready to eat dessert, prep the fried bananas. Take your individual serving dishes and put one scoop of the vanilla ice cream, place two pieces of the fried banana on top in a pretty fashion, sprinkle the sweetened shredded coconut and toasted slivered almonds. Serve.

Exotic Fruit Dessert

Here is one of my all time popular festive occasion desserts its called Pineapple Boat Fruit Salad. I like to mix a bit of the Pacific Island Flavor along with some South Asian Flare to give it a “Hapa Hapa” (mixed heritage in Hawaiian) just like me.
Its a dish that takes a bit of prep time to make, but to assemble is rather simple. I like to prep everything at least 30 minutes before a party then lay it out once everyone is ready to eat dessert.
Its also a great date night dessert your special someone will think you’ve spent hours on making it. The tastes is fresh like a tropical paradise holiday that can whisk you away to that special holiday you so ever need to take.
Prep time: Less the 30 minutes
Cook time: Less than 4 minutes
Serves: Up to four people
What you’ll need:
- sharp knife
- sauce pot or small pot
- flat simple serving dish
- non active cold bowl
- small ice cream scooper or fruit scooper
- 1 large and firm pineapple
- 1 mango
- 2 bananas
- 1 papaya
- 1 honey dew
- 6 T granulated sugar
- 1 1/4 c water
- 1 piece star anise
- 1 inch cinnamon stick
- 1 clove
- 1/2 c lemon juice plus 1 cup for reserve
- 2 fresh mint sprigs
What to do:
- Bring the sauce pot to low heat with the water and add the herbs, lemon juice, and sugar mixing well until the sugar has dissolved. This should take about 2 to 3 minutes. Once done, set aside to cool until ready to serve.
- 30 to 20 minutes before your party guest arrive start cutting the fruits. Save the banana for last.
- Cut in half the honey dew, remove the seeds and with the scooper scope out little round shape balls from the honey dew. Place in a cold bowl.
- Then with the same rinsed scooper, cut in half the papaya, remove the seeds and scope out some more little round shaped balls. Also place in the same cold bowl as the honey dew.
- The mango can be cut in four sides, with each side; slice horizontally and vertically to create small shape squares. Do this to all four sides of the mango once done, scope out with a spoon. Place in the cold bowl with the already cut fruit.
- To prevent from browning the already prepped fruit, splash a bit of lemon juice through out.
- Cut the pineapple in half length wise to resemble a shape of a boat. Leave the green trunk part of the pineapple which adds to the exotic look of the boat. Use a large or sturdy spoon and begin to hallow out each half of the pineapple. Save the pineapple flesh for later. Splash a bit of lemon juice onto the already cored halves of the pineapple and set aside.
- Finally cube the bananas in small square shapes add a bit of lemon juice and set aside, do not put in the same cold bowl as it might turn brown or rather make all the other fruits turn brown.
- When your guest are ready to have dessert fold the sweet sauce along with the already cubed bananas into the cold fruit bowl. I like to be very gentle when I am folding the sauce and fruits together because I noticed that they tend to bruise easily and fall apart.
- Now tip the fruit mixture onto each half of the already cored pineapple ensuring the there is an even amount of distribution. Serve right away.

Update on the Soy Products from Disco
Mahalo Chicos,
Remember when I posted about some soy products I purchased at Disco? Well, this is an update to one of the three soy products. The “Hamburger”mostly made from wheat gluten, the color, texture and shape were executed well. However, the flavor was ghastly.
I tried it to make a teriyaki flavored burger out of it and the soy patty still came out vile.

Oreo Shakes Anyone?
Hola Chicos,
A the wonderfully delicious taste of a home made Oreo shake. This dessert is such a simple dessert that even a youngster can make it.
My other half loves Oreo shakes, strawberry shakes, and just about any shake that is sweet and bad for you.
I am not much of a sweet eater so I make the shakes just for him and he adores me for it.
Prep time: less than 5 minutes
Cook time: less than 5 minutes
Serves: one
What you will need:
- A blender
- 4 Oreo cookies plus one for garnish
- 2 -4 cups of milk
- 4-6 scoops of cream ice cream (I use Grufiti which is available in any local super mercado)
What to do:
- Put ingredients 2-4 in blender and mix.
- Serve on a chilled glass.
- Garnish with One Oreo cookie
