<p>An easy vegetable dish that is sweet, simple, and goes with just about any entree. Braised peas with green onions.</p>
<p>I like to prepare a larger batch and then freeze some in individual zip-lock bags. This way, I can reheat it for my man&#8217;s bento lunches or when I&#8217;m feeling lazy and not in the mood to cook.</p>
<p><strong>Serves: Up to 6 cups</strong></p>
<p><strong>Prep Time: Less than 5 minutes</strong></p>
<p><strong>Cook Time: Less than 10 minutes</strong></p>
<p>Ingredients and Preparation:</p>
<p><strong>Ingredients:</strong></p>
<p>1. 4.5 c green peas (I like to use fresh green peas)</p>
<p>2. 3 Bibb lettuce: Julienned</p>
<p>3. 1 bunch scallions: roughly chopped</p>
<p>4. 1/2 c water</p>
<p>5. 1 T Dark Soy Sauce</p>
<p>6. 1/2 Mirin</p>
<p>7. 1/4 c butter</p>
<p>8. Freshly ground sea salt and black pepper corns</p>
<p><strong>Preparations:</strong></p>
<p>1. In a deep skillet or what ever you have handy, heat about 1 tablespoon of butter on medium low heat.</p>
<p>2. Add the lettuce and cover for 1 to 2 minutes. Add the water. Allowing the the lettuce to soften a little.</p>
<p>3. Then add half of the already chopped scallions. Fold and add the peas.</p>
<p>4. Season with soy sauce and mirin.</p>
<p>5. Cover and turn off heat and let sit for 3 minutes.</p>
<p>6. Add the remaining butter. Let it melt naturally.</p>
<p>7. Remove from skillet and season with salt and pepper. Add the remaining scallions and serve.</p>
<p>8. To store in the freezer, separate individual servings and allow to cool completely before placing in the freezer.</p>
