Bom Dia,
My tomato chicken with saffron rice and asparagus is an elegant go to dish when I am craving chicken.
Its really simple to make and most of the work can be done a day ahead of time.

Prep Time: Less than 10 minutes
Cook Time: Less than 15 minutes

<p>Bom Dia,</p>
<p>My tomato chicken with saffron rice and asparagus is an elegant go to dish when I am craving chicken.</p>
<p>Its really simple to make and most of the work can be done a day ahead of time.</p>
<p><strong>Serves: 2</strong></p>
<p><strong>Prep Time: Less than 10 minutes</strong></p>
<p><strong>Cook Time: Less than 15 minutes</strong></p>
<p>Ingredients for the chicken:</p>
<p>1. 2 boneless skinless chicken breast</p>
<p>2. 1 can of Italian tomato</p>
<p>3. 1 T dried Oregano</p>
<p>4. 2 T balsamic vinegar</p>
<p>5. 1 sprig of fresh rosemary</p>
<p>6. Sea salt and black peppercorn</p>
<p>How to:</p>
<p>1. On medium high heat, add the oil in a deep pan</p>
<p>2. Salt the chicken and brown on both sides</p>
<p>3. Once the juices of the chicken run clear, add the tomatoes, oregano, rosemary, balsamic vinegar, and salt and pepper.</p>
<p>4. Turn on simmer and cover for  10 minutes.</p>
<p>Serves with saffron rice and asparagus.</p>
