Tomato Chicken with Saffron Rice and Asparagus

Bom Dia,
My tomato chicken with saffron rice and asparagus is an elegant go to dish when I am craving chicken.
Its really simple to make and most of the work can be done a day ahead of time.
Serves: 2
Prep Time: Less than 10 minutes
Cook Time: Less than 15 minutes
Ingredients for the chicken:
1. 2 boneless skinless chicken breast
2. 1 can of Italian tomato
3. 1 T dried Oregano
4. 2 T balsamic vinegar
5. 1 sprig of fresh rosemary
6. Sea salt and black peppercorn
How to:
1. On medium high heat, add the oil in a deep pan
2. Salt the chicken and brown on both sides
3. Once the juices of the chicken run clear, add the tomatoes, oregano, rosemary, balsamic vinegar, and salt and pepper.
4. Turn on simmer and cover for 10 minutes.
Serves with saffron rice and asparagus.

Chicken Penne Primavera

My chicken penne primavera is a simple yet tasty main dish you could create any time of the year. Its ingredients are low cost and easy to obtain.
Serves: Up to 4 people
Prep Time: Les than 5 minutes
Cook Time: Less than 30 minutes
Ingredients:
1. 4 medium sized grilled chicken breast sliced in horizontal direction.
2. 400 grams of penne pasta already cooked al’ dente
3. 1 c peas
4. Julienned carrots
5. 1/2 c spinach
6. 1 c broccoli florets
7. 1 diced garlic clove
8. Extra virgin olive oil
9. Salt and pepper
10. 4 c pre made tomato sauce
How to Make:
1. Dry sauteed the garlic along with all the vegetables and chicken then lightly oil. Add the penne pasta and tomato sauce. Fold together. Turn off heat. Serve

Soy Honey Baked Chicken

My soy honey baked chicken is wonderful go to dish to add to salads, quinoa, brown rice, and more.
I’ve been on a eat clean diet for a while now, and I thought it be a great idea to share my eat clean diet with the readers of my blog as well as people that just drop by.
Serves: 4 plates
Prep Time: Less than five minutes
Cook Time: About 60 minutes
What you’ll need and do:
Material
1. 4 boneless skinless chicken breast
2. Big zip lock bag
3. 1/2 c low sodium soy sauce
4. 1 T honey
Process:
1. Put the chicken along with the ingredients into the zip lock bag. Massage the marinade until it coats the chicken. Seal tight.
2. Place in the fridge for one hour or more. Over night is better, the flavor will really be absorbed by the chicken.
3. Preheat oven to 230c. Place the marinaded chicken in a non-stick baking dish. Bake for about 60 minutes, checking ever so often to ensure the juices run clear.
4. Let cool, cube, and serve with salad, rice and more.
