Caprese de la Espinaca y Tomate
Oi!,
My caprese spinach and tomato egg dish is another one of my quick meals. Its been our thing to have Sunday brunches.
Serves: 2
Prep Time: Less than five minutes
Cook Time: Less than ten minutes
Ingredients:
1. 5 egg-whites: already beaten in a bowl
2. 1/2 c fresh spinach
3. 1 c fresh diced tomatoes
4. Extra Virgin Olive Oil
5. Sea salt and black pepper
What to do:
1. Heat skillet with a bit of olive oil. Cook the egg whites. Remove and place on-top the fresh spinach and tomatoes. Drizzle olive oil and salt and pepper to taste.
