Braised Peas with Green Onions

Posted in Island Flavors: Vegetables by odeliza on the October 12th, 2009

Mahalo,

An easy vegetable dish that is sweet, simple, and goes with just about any entree. Braised peas with green onions.

I like to prepare a larger batch and then freeze some in individual zip-lock bags. This way, I can reheat it for my man’s bento lunches or when I’m feeling lazy and not in the mood to cook.

Serves: Up to 6 cups

Prep Time: Less than 5 minutes

Cook Time: Less than 10 minutes

Ingredients and Preparation:

Ingredients:

1. 4.5 c green peas (I like to use fresh green peas)

2. 3 Bibb lettuce: Julienned

3. 1 bunch scallions: roughly chopped

4. 1/2 c water

5. 1 T Dark Soy Sauce

6. 1/2 Mirin

7. 1/4 c butter

8. Freshly ground sea salt and black pepper corns

Preparations:

1. In a deep skillet or what ever you have handy, heat about 1 tablespoon of butter on medium low heat.

2. Add the lettuce and cover for 1 to 2 minutes. Add the water. Allowing the the lettuce to soften a little.

3. Then add half of the already chopped scallions. Fold and add the peas.

4. Season with soy sauce and mirin.

5. Cover and turn off heat and let sit for 3 minutes.

6. Add the remaining butter. Let it melt naturally.

7. Remove from skillet and season with salt and pepper. Add the remaining scallions and serve.

8. To store in the freezer, separate individual servings and allow to cool completely before placing in the freezer.

Enjoy!

Tchau,
