Simple Scrambled Eggs

Okay, so I am slowly learning how to posts photos up on this site. Here is  a picture of some simple scrambled eggs that I like to make for our family Sunday Brunch.

Serves: 2

Prep Time: Less than five minutes

Cook Time: Less than five minutes

What you’ll need and do:

1. 4 whites of large brown eggs

2. 2 t oilve mayonaise

3. 1 T butter for the skillet or non-stick pan

4. Freshly ground sea salt and black pepper.

5. In a mixing bowl, beat the egg whites with the mayonaise.

6. Heat your skillet to low-you don’t want it high because you can over cook the eggs that way- and add the butter.

7. Pour in the egg white mixture and start to cook.

8. When you see a soft texture to the eggs remove and add the freshly ground sea salt and black pepper corns. Serve warm.

Savory Broccoli Baked Pasta-Simple and Tasty-Uruguay

Mahalo Chicos,

Broccoli pasta is very filling and has a homey taste to it you’d want to take a nap afterwards that’s how hearty this dish is. I like to make this dish when the weather is cold and when I am too lazy to make a bit more of a complicated dish. So this dish can be made by even the most inexpereinced cook.

Serves: Up to four people

Prep Time: About ten minutes

Cook Time: 60 Minutes

What you’ll need and do:

1. 4 c of fresh broccoli florets

2. 2 c of creamy ricotta cheese

3. 2 c param cheese

4. 2 c el’dente farfalla or noodle pasta

5. A few dashes of paprika

6. A few dashes of Green Tabasco Sauce

7. Freshly ground sea salt and black pepper corns

8. 2 C whole milk

9. Deep dish casserole dish

10. Cook pasta so that is is close to el’dente and cook the florets until bright green but with a bite to it.

11. Pre heat oven to 175 degrees C.

12. In your casserole dish, mix the ricotta cheese, param cheese, a few dashes of paprika, green Tabasco sauce, and freshly ground pepper and sea salt.

13. The florets should only take less than 3 minutes to cook, once it is done, tip in on to the casserole dish.

14. Depending on the package instructions of your pasta, once done, tip and mix well with the mixture of cheese and broccoli.

15. Add the milk ensuring that you mix well.

16. Bake for about 60 minutes.

Home Made Chewy Chocolate and Walnut Cookies

I made these the other day and they were a hit with my family. I still can’t believe there are a few left.

Serves: Up to 16 small sizes

Prep Time: Less than fifteen minutes

Cook time: About eight to ten minutes

What you’ll need and do:

1. Mixing bowl with blender and two baking pans

2. 1/2 c butter

3. 1 c packed brown sugar

4. 3 T powdered sugar

5. 1 egg

6. T vanilla extract

7. 1 3/4 c flour

8. 1/2 t baking soda

9. A pinch of salt and 1/2 T baking soda

10. 1 1/2 t ready made coffee

11. 1 1/2 chocolate chips

12. 2 c walnuts

13. Cream, butter, sugar, and eggs in the bowl with blender.

14. Add the vanilla and coffee.

15. Add the flour, salt, and baking soda. Make sure that it is creamy.

16. Fold in the chocolate chips and walnuts.

17. Set your oven to 190 degrees C.

18. Spoon the mixture onto the baking pan ensuring you give a space in-between.

19. Bake for about eight to ten minutes, remove from baking pan and place on drying wrack. Serve.

Baked Potatoes-Meal in Minutes-Survival Skills for Expats!

Mahalo Chicos,

I like to make these potatoes a few hours earlier before a meal, once it’s meal time, all I have to do is pop it in the microwave and poof! Meal in minutes. I like to serve these baked potatoes with a whole steamed artichoke and as a dip simple olive oil mayonnaise.

I think I will make it today but, forgive me for the pictures as for some reason I can’t load my edited pictured on this particular site.

Serves: 2 people

Prep time: Less than five minutes

Cook time: Less than thirty minutes in the oven and less than five minutes in the microwave.

What you’ll need and do:

1. 2 large potatoes

2. 1/c c soft ricotta cheese

3. Freshly chopped up dill

4. Freshly ground sea salt and black pepper corns

5. A few pinches of paprika

6. Olive Oil

7. Foil Wrap-optional-

8. Baking pan

9. Cut potatoes length wise and scoop the insides out carefully.

10. Mix the ricotta cheese, dill, salt and pepper, and paprika in a small bowl.

11. Add the mixture to the already prepped potatoes and place them onto the baking pan.

12. Pre-heat oven to 180 degrees C on broil.

13. Liberally add the olive oil and some more salt and pepper onto the stuffed potatoes.

14. Place in oven too cook for less than 30 minutes.

15. Let cool and place in air tight container in the fridge.

16. If using foil, remove foil, place on a plate, and microwave for about five minutes or until cook thoroughly serve some more freshly chopped up dill and a few more pinches of paprika.

Balsamic and Soy Dressing in Uruguay

I like to combine balsamic and soy sauce to make a dressing for my cold noodles as well as my Asian inspired salads. Its really simple, quick, and tasty that any home cook can do it.

Serves: Up to 4 people

Prep Time: Less than five minutes

Cook Time: NONE

What you’ll need and do:

1. A mixing bowl

2. 2 c balsamic vinegar

3. 1/2 c low sodium soy sauce

4. 1 c extra virgin olive oil

5. 1 shallot diced

6. A pinch of dried red chili flakes

7. Powdered ginger

8. Asian Spice powder

9. 2 c warm water

10. Freshly ground sea salt and vinegar

11. Mix everything in a bowl, add some freshly ground sea salt and vinegar, and store in air tight container in the fridge until ready to serve. Will lasts about three days.

Gourmet Grilled Cheese Sammies in Uruguay

Mahalo Chicos,

Grilled cheese sandwiches are a must in my household-unfortunately there is no real cheddar cheese anywhere in Uruguay-so I like to change it up a bit. This is when I came up with my Gourmet Grilled Cheese Sammies. You can have it for lunch, supper, snack, dinner, and even parties. Its an easy dish to make and a hit at my house!

Serves: Up to four people

Prep Time: Less than five minutes

Cook Time: Less than ten minutes total

What you’ll need and do:

1. Four slices wheat bread or white if you prefer

2. 1 c cream cheese

3. 1 c blue cheese

4. 2 slices mozzarella cheese

5. A lot of butter

6. Non stick skillet and food processor

7. In a food processor, mix the cream cheese, blue cheese together with a little butter until smooth.

8. Heat your non stick skillet with a lot of butter, ensuring that the butter does not burn use low heat to medium low heat.

9. Take the slices and fry on the already heated, pre-buttered skillet, ensuring that both side are toasted golden brown.

10. Take out of the non stick skillet and spread the cheese mixture and the slices of mozzarella. This will form two sandwiches.

11. Butter your skillet again and add the already prepared sandwiches. Take a paper towel or two and put on-top of the sandwiches. Take a heavy pan and place on-top of the sandwiches covered by the paper towel.  Take the heat on very low and press down the heavy pan until you squish the sandwiches-a little of the cheese mixture might come out, you want this-.

12. Slice in two’s and serve.

Home Made Lemon Bars in Uruguay

My other half loves tart flavors, so I came up with this lemon bar recipe to please his tastes buds.

Serves: Up to Four People

Prep time: Less that fifteen minutes

Cook Time: About thirty minutes

What you’ll need and do:

For the crust:

1. 2 c all purpose flour

2. 1/2 c powdered sugar

3. 2 sticks melted butter

For the Filling:

1. 4 eggs

2. 2 c sugar

3. Juice and rind of 6 large lemons

4. 1/4 c all purpose flour

5. 1/2 teaspoon baking powder

6. Powdered sugar for dusting

What do do:

1. Preheat oven to 350 degrees F or 220 degrees C

2. mix the ingredients for the crust

3. Use a shallow square baking pan and pat spread the already mixed crust and cook until golden brown about ten minutes or so.

4. Mix all the ingredients for the filling in another bowl thoroughly, cover with flim and put in the fridge until ready to bake.

5. Take out the already golden baked crust and let sit until completely cool, about ten minutes or so.

6. Take the already mixed filling and gently pour the filling mixture onto the cooled crust.  Turn down the heat a bit-at-least to 180 degrees F or 100 degrees C-. Place in the oven and back for twenty minutes or so until baked completely.

Breakfast Toast in Uruguay

Mahalo Chicos,

Since I am on a Brunch or Breakfast fetish this week, I thought I’d end the rest of the week with my all time famous Breakfast Toasts. Its basically a french toast but not sweet, it has an omelet flavor to it and since its so hearty it could be a snack or a meal all on its own.

Serves: Up to four people

Prep Time: Less than five minutes

Cook Time: Less than Five minutes

What you’ll need and do:

1. 4 pieces of any kinda of bread; wheat or white-I use wheat-

2. 4 egg whites

3. 1 small onion finely chopped

4. A pinch of dried red chili flakes

5. Freshly ground sea salt and vinegar

6. Combine numbers 2 through 5 in a mixing bowl

7. Dip each piece of bread until soaked through

8. Heat your non-stick skillet

9. Fry the toast on each side until the egg and the bread are cooked through and it has a golden color to it.

10. Repeat with the rest of the pieces of toast until done.

Home Made Swiss Potato Pancakes in Uruguay

As I mentioned in my most recent post I like to prepare a family tradition of Sunday brunch every Sunday of the week. And my Swiss potato pancakes are a hit along side one of my famous omelettes. Its a really hearty dish that you can make for any meal.

Serves: Up to 2 people

Prep Time: Less than five minutes

Cook Time: Less than five minutes

What you’ll need and do:

1. 2 white potatoes

2. shredder of some sort like a food processor or manual shredder

3. 2 egg whites

4. 1 small sweet onion already julienned

5. Some freshly ground salt and pepper to your tastes

6. A few dashes of dried red chili flakes

7. Grape seed oil or safflower oil

8. Shred the potatoes

9. In a mixing bowl add the egg whites, salt and pepper, chili flakes, onion, and finally the shredded potatoes. Make sure that it is mixed well.

10. Heat your deep pan with about an inch or so of oil. Make sure the oil is not too hot that it could just burn the pancakes.

11. take a spoon full of the pancake mixture and add to the already heated pan with oil. Repeat this until the pan is filled with oval shaped pancakes.

12. Turn when golden brown on on side and ensure golden brown on the other side.

Home Made German Pancakes in Uruguay

Mahalo Chicos,

My mother is half German and when we were kids she’d make Sunday a special brunch day where she’d make home made German Pancakes. Now that I am older and have a family of my own I have my own special Sunday brunch every Sunday of the week. And sometimes I mix it up from french toast to German Pancakes.

Serves: Up to 4 people

Prep time: Less than five minutes

Cook time: Less than one minute per pancake

What you’ll need and do:

For the ingredients:

1. 2 eggs

2. 2 T refined sugar

3. 3 T all purpose white flour

4. 3/4 c sparkling water

5. Blender or electric mixer and bowl, and non-stick skillet 

6. Take all the ingredients and mix together in the blender or electric mixer and bowl

7. Heat your non-stick skillet and add a tablespoon of the mixture, ensure that the surface area is coated or enough of the pancake mixture creates a thin circle or thin square. Flip when lightly golden brown.

8. Repeat until all the pancake mixture is done. Serve warm with some fresh berries and honey as syrup.
